If you’re noodle obsessed like me, this dish is made with dried yam noodles.
The texture is chewier than bean thread noodles and a gluten free go to for any dish.
Delicious at room temperature and a lovely cold dish for the summer.

This is my first Moroccan Lentil soup and I will share this recipe with you soup lovers.
By the way, If you ever have your soup evaporate while simmering, the brick on the cover will solve that problem.
